Only other Notes Mail users will see the letterhead.

Yes, but it might look different depending on what release of the Mail template they are using.

For example, some letterhead was simply redesignd in R8.

the Gateway letterhead in R8 and looks like this for those using the R8.x template:
If you sent that to an R7 user, they would see this:


Some letterhead images are completely new in R8, and replaced certain letterhead from R7

the Surfboards letterhead is new, and this is what R8.x users would see:
If you sent that to an R7 user, it would map to the "Green & Yellow Diamond" letterhead :
